There is nothing more comforting than having a slow cooked meal permeate your living space with smells so divine as this soup recipe I have prepared today.

Thank goodness we get to taste test all our yummy ideas right here as we make them.

Seriously though, slow cooked comfort food is so good for the body and the soul.

We have not entered salad season yet, thank goodness for that.

Indian Inspired Pumpkin & Sweet Potato Soup

Vegan, Gluten Free, Dairy Free

Serves 4 bowls.

Ingredients:

  • 1kg of pumpkin diced
  • 500gm of sweet potato diced
  • 1 cup of adzuki beans (dry)
  • 1 cup of coconut milk (you can use cream but use less or more to taste)
  • 1-2 cups of boiling water to add last
  • 1 orange
  • 2 cloves garlic
  • small chunk of ginger
  • coriander bunch
  • tablespoon of coconut oil
  • tablespoon of mustard seeds
  • tablespoon of coriander seeds
  • tablespoon of fennel seeds
  • tablespoon of vegeta(vegetable stock)
  • teaspoon of turmeric
  • teaspoon of Ayurvedic Curry Powder (includes cumin, coriander, black pepper, cinnamon leaf, tumeric, black cumin, ajwain, mustard seeds, caraway seeds, cinnamon bark, cardamon, cloves, ginger, fenugreek, nutmeg, mace, star anise, long pepper, nigella, curry leaf, chilli, asafoetida)

Equipment:

  • Slow Cooker preferable
  • Chopping board
  • Chefs knife
  • wooden spoon
  • cup and spoon for measuring

Method:

  • Add 1 tablespoon of coconut oil into slow cooker turned on HIGH.
  • Finely chop garlic, ginger and coriander.  Add this to the warmed coconut oil and stir through.

  • Now add all the spices including the vegetable stock powder and stir through again and add the cup of adzuki beans.

  • Slice and dice all your peeled pumpkin and sweet potato.  At this point you could also add potato or leek…or other vegetables of your choice.  Add this straight away to theherbs and spice mix.

  • Peel and dice 1 orange and add to the mix.

  • Finally add 1 cup of coconut milk and add the final amount of boiling water so that the vegetables are only just covered with liquid.

  • Put the lid on the slow cooker and leave on appropriate setting to ensure it is ready for when you need it.  I made this at 10am this morning and want to eat it for lunch so I kept it on high.

  • It is ready when the beans are soft and you can use a masher to mix the soup into a lumpy hearty meal.

Variations and helpful hints.

  • Add any influence you like by preparing your herbs and spices base to reflect the taste. An easy alternative would be Thai!

  • Using the Ayurvedic Curry powder is an easy way to cover all the spices for Indian, but even using a few from the list will mean your soup will last great.

  • If you don’t have a slow cooker, just get a pot and you will need to stir and revisit throughout the cooking process.  I would still recommend ‘slow cooking’ this baby, and having it on the lowest heat setting possible.  Or better still, when prepared fully in pot, transfer to oven proof container (if the pot has metal handles keep it in this with foil on top) with lid and slow cook in oven.
